IRISH CHICKEN AND DUMPLINGS RECIPE
This recipe will teach you how to make Irish Chicken and Dumplings. It is a quick and easy recipe to make. Irish Chicken and Dumplings is a very tasty dish and the flavours are fantastic. My mother would never let us have bread with the Irish Chicken and Dumplings as she always insisted that the dumplings were our bread and it took me till I grew older to realise what she meant.
Irish Chicken and Dumplings Ingredients
1 tsp salt
3 cups water
1/2 tsp pepper
1 1/3 cups milk
5 carrots sliced
3 cups baking mix
2 onions quartered
4 potatoes quartered
1 cup chopped celery
10oz packet frozen peas
1/2 tsp poultry seasoning
4 boneless chicken breast halves
2 x 10.75 oz cans condensed cream of chicken soup
Irish Chicken and Dumplings Method
In a large heavy pot combine soup, water, chicken, celery, onion, salt, poultry seasoning and pepper then cover and cook over low heat for about 1 1/2 hours then add potatoes and carrots then cover and cook another 30 minutes. Remove chicken from pot and shred it and return to pot. Add peas and cook only 5 minutes longer then add the dumplings.
To make dumplings: Mix baking mix and milk until a soft dough forms then drop by tablespoonfuls onto boiling stew. Simmer the Irish Chicken and Dumplings covered for 10 minutes then uncover and simmer an additional 10 minutes.

Sebenarnya aslinya resep sup ayam ini hanya terdiri dari ayam, bawang bombay dan kentang sebagai bahan utama tetapi karena saya ingin isinya lebih bervariasi maka kutambahkan wortel, bawang putih, dan kembang kol. Rasanya creamy, mungkin untuk yang tidak suka susu tidak cocok :-)
Kata si penulis, resep ini berasal dari Irlandia Utara, dari daerah Moira, County Down.
Ingredients:
3 lembar bacon
500 gr filet dada ayam, potong kotak
25 gr butter
3 buah kentang, potong kotak
3 buah bawang bombay, potong kotak
3 buah wortel, potong kotak (optional)
3 siung bawang putih, cincang halus (optional)
100 gr kembang kol, potong menurut kuntumnya (optional)
600 ml kaldu ayam
600 ml susu cair
150 gr krim cair
garam dan merica secukupnya
2 sdm peterselie segar, cincang
pelengkap:
Irish soda bread (saya ngga bikin, jadi diganti pakai bread roll)
Directions:
Tumis bacon dalam panci selama kira-kira 10 menit.
Tambahkan butter, bawang, daging ayam, kentang dan wortel.
Masak 15 menit.
Tambahkan kaldu dan susu, masak 45 menit, aduk rata.
Bumbui dengan garam dan merica.
Tambahkan krim, peterselie cincang dan kembang kol. Angkat.
Sajikan dengan soda bread (atau apa saja, sesuai selera).
Catatan:
Saya melakukan sedikit perubahan, potongan ayam kucampur dengan shao hsing + maizena + kecap asin dan kumasukkan pada saat kaldu dan susu sudah dicampurkan.
Bila suka, bisa juga ditambahkan jagung pipil, irisan daun bawang besar dan cellery root.

This recipe really surprised me, it is really creamy and the potato adds such a great texture to the soup. What got me to make it was the bacon, chicken and bacon are a marraige made in heaven, add to that some cream and how wrong can you go! It’s really good, try it. (good for 4 servings) What you need
4 or 5 slices bacon chopped
500g chicken breast meat in small chunks
2 large potatoes cubed
2 onions chopped
500ml chicken stock
500ml milk
150ml double cream
Palm of finely chopped parsley
1 tablespoon butter
The process
In a large pot on a medium to high heat, add the bacon and chicken pieces and cook, stirring frequently for about 6 minutes until the chicken is white. Add the onions and cook for about another 5 minutes stirring constantly.
Now add the potatoes, butter, stock and milk, give it a stir, bring it to the boil, reduce the heat and allow to simmer for 45 minutes.
Taste and season to your liking.
Add the cream, stir to combine, add the parsley, stir again and then simmer for a further 5 minutes.
Serve straight away with your favorite bread or rolls and a salad t finish off the meal.
